Abstract: | Enzymes are biological catalysts. They increase rate of chemical reaction taking place with in living cells without themselves suffering any overall changes. They reactants of enzyme catlysed reactions are termed substrates and each enzyme is quite specific in character , acting on a particular substrate or substrate to produce a particular product or products. Microbial enzymes are commercially important. They have wide application in various industry. The history of modern enzyme technology really started in the 19th century, while studying the fermentation of sugar to alcohol by yeast. Louis Pasteur came to the conclusion that this fermentation was catalyzed by a vital force contained within the yeast cells called "ferments", which were thought to function only within living organisms (Manchester et al., 1995). In 1877, German physiologist Wilhelm Kuhne was first used the term “enzyme”, which comes from Greek ενζυμον "in leaven", this process. An enzyme's name is often derived from its substrate or the chemical reaction it catalyzes, with the word ending in –ase. A large number of industrial processes in the areas of pharmaceutical, environmental and food biotechnology utilize enzymes at some stage or the other. |
